One & Only Palmilla
Overview
The One & Only Palmilla is an extraordinary resort that sits on the tip of the Baja Peninsula. Guests will be greeted by the waves of both the Pacific Ocean and the Sea of Cortez, plus the views of the desert filled with massive mountains. This resort has an Old Mexico feel with its red-tiled roofs, whitewashed walls, and multiple fountains scattered amongst the grounds. Surrounding it all are looming palm trees that sway in the slightest of breezes and fragrant tropical blooms that will awaken every guests’ senses.
There are 194 guest rooms and suites and they all offer phenomenal views of the ocean. However, most guests will be more impressed with the private patios, complete with daybeds, as well as the twenty-four-hour butler services.
The One & Only Spa offers holistic treatments that were created from local ancient traditions and modern qualities. In between treatments, guests can visit the Yoga Garden, utilize the hot and cold rock pools, and sit in the steam room. There is also a fitness center, but most guests are too focused on the spa and the beach to use it too much.
Mexican flavors can be found in almost every dish at the open-air Breeze dining venue, while more elegant choices await those who wander into Seared for a more intimate dining experience. There are also two grills down by the beach for those guests who are looking for informal settings.

- The open air terrace ‘Breeze’ overlooking the beach and the pools at the heart is the of the resort is the place to linger over breakfast or lunch, with organic Mexican ingredients a speciality. Freshly baked brioches and the usual assortment of breakfast eggs are complemented by spicy chilaquiles, burritos machaca – Sonorran shredded dry beef with scrambled eggs, guacamole and Pico de Gallo. At night the more formal choice is Suviche, an elegant grown-up space complete with an alabaster bar and marble flooring where fresh sushi and ceviche are the signature dishes. For grand dinners there’s also ‘Seared’ overseen by Michelin-starred Jean-Georges Vongerichten, serving prime grade Kobe beef and an excellent, if overlooked, selection of Mexican wines. Organic chicken with buttery spinach or Colorado lamb chops join the steak selection. Informal dining options include two further beachside grills.

- Just 10 minutes' drive (7km) from the charming San José del Cabos and about half an hour (28km) from the more frenetic Cabo San Lucas, Palmilla sits beside the Pacific offering a choice of beaches – one of them safely swimmable year round. San José retains its village feel, and has an authentic Mexican ambience replete with high-end restaurants and a plethora of boutiques and galleries.
